
Aubergine with mozzarella and yoghurt sauce
Aubergine with mozzarella and yogurt sauce is a delicious and tasty dish, which can be served as an appetizer or a single dish.
Ingredients
- 1 aubergine (about 400 g)
- 50 g breadcrumbs
- 200 ml sunflower oil (for frying)
- 100 g mozzarella cheese
- 2-3 leaves basil (fresh)
- 200 ml yogurt
- 4-5 g parsley
- 1 clove garlic
- q.s. salt
- q.s. pepper
Instructions
- Wash and slice the aubergine into rounds about 5 mm thick, salt on both sides and allow them to rest for about 30 minutes. After that, dry them with sheets of paper towel.
- Pass the aubergine slices into the breadcrumbs and fry them in hot oil. Put them on a sheet of paper towel to remove any excess oil.
- Grate the mozzarella and mix it with the finely chopped fresh basil and black pepper to taste
- Form each portion of the appetizer, taking three pieces of the fried aubergines, then place one on top of the other and put a little mozzarella between them.
- Mix the yogurt with the minced garlic, the finely chopped parsley and a pinch of salt.
- Just before serving, pour the yoghurt sauce over the aubergines.
