Beet, carrot and apple salad is an extremely healthy combination of fruits and vegetables rich in vitamins and minerals.
Beetroot is a rich source of nutrients. Carrots and apples contribute with an extra dose of useful properties and fresh taste. The fresh lemon juice and extra virgin olive oil give additional aroma. And to achieve a perfect taste and give a crispy note, fresh parsley leaves and toasted walnuts contribute.

Beet, carrot and apple salad
- 150 g red beet (peeled)
- 150 g carrots (peeled)
- 150 g apples (peeled)
- q.s. walnuts toasted
- q.s. parsley
- q.s. lemon juice
- q.s. extra virgin olive oil
- q.s. salt
- Wash and peel the red beet, apple and carrot. Grate the ingredients one by one with a large hole grater. Put them in a bowl.
- Season with lemon juice, extra virgin olive oil and salt to taste.
- Sprinkle with chopped fresh parsley and chopped toasted walnuts.
