  • 1 egg
  • 30 g honey
  • 55 g sugar
  • 40 g butter
  • 5 g cinnamon
  • 5 g bicarbonate of soda
  • 5 g ginger powder
  • 250 g flour
  • 20 g vanilla
  • q.s. brown sugar


  • Beat the room temperature butter with the sugar. Add the egg and the honey and mix.
  • In another bowl, mix the flour, the baking soda, the ginger, the cinnamon and the vanilla. After that sieve it and add gradually everything to the other mixture. Mix all together.
  • Make the dough. Then spread it with a rolling pin on a lightly floured surface in a thickness to about 5 mm. Using a star cookie cutter (or other shape), cut the biscuits and place them on a baking tray covered with parchment paper. Sprinkle with brown sugar. Bake in a preheated oven at 180 degrees for about 9-10 minutes.
  • Let them cool and store in a box.
